Who could resist these little guys? So easy to make using up left over turkey from the holidays. Here’s a link to my previous post Creamy & Comforting Chicken Pot Pie. Simply omit the chicken component and use the cooked turkey, roughly chopped. I essentially used the same recipe although cooked fully on the stove until the veggies were tender and the consistency had thickened. (I had to help the potato & carrot along by microwaving a few minutes to get somewhat fork-tender then added those to the pot). I saved the peas to add at the very last.
Just buy the puff pastry shells at your local grocery store and bake according to package instructions. Then fill with the yummy pot pie mixture – serve with a nice salad and you have a fabulous dinner!
