Have you ever thought about a quesadilla as an elegant party finger food? You should! This version is surprisingly light. It’s perfect for holding in your hand and not greasy in the slightest. It has a lovely crunchy outside, a wonderful mellow and buttery cheese inside, with a crisp, sweet & tart apple that blends beautifully with the cheese. Who can’t make a quesadilla? They’re easy and cost-effective, but if you want to kick them up an international notch, why not use a foreign cheese from France or Spain or Ireland, for that matter? Avoid the orange cheddar is my point, people.
With this version for the 2015 Golden Globes party, we used Brie cheese, added thinly sliced green apples and served them with jalapeño preserve.
With a non-stick skillet, no oil or spray is needed in the pan, just warm over medium heat on both sides. Then, if you have it, place on a hot stove top grille pan to get the lovely grille marks.
Let rest a few minutes to let the cheese set up, then slice and plate!
Pick you favorite jalapeño preserve to serve along side as a dip. Trust me, the preserve really makes this snack shine. Consider it mandatory. The one shown below Sweet Heat Jalapeño Preserves by PepperLane..and it is heavenly.
