Technique: Learning Pre-Shape and Shape for Sourdough Bread & also Proofing!

My technique video below demonstrates Pre-Shape and Shape for 3 loaves of sourdough. I'll teach you how to build tension for that fantastic oven-spring. We'll work with 3 loaves of dough: 2 are my Beginner Tartine Sourdough Bread recipe, and the 3rd is an intermediate loaf using whole wheat and spelt.

I also show you how to check for "PROOFING", and preparing your bannetons for your overnight cold retard.

    Hello Sara. Just wanted to say thank you for presenting so many comprehensive videos about making and working with sourdough. I have been making sourdough for only 6 months and trying out different methods and recipes. I find your videos have helped me to fine tune my methods; especially the shaping. And love the wrap! Definitely will keep that in the routine. Working with high hydration doughs can be frustrating at times, but the results are always tasty, so the effort is well worth it. Thanks once again.
